CURRENT VINTAGE: 2021
Saint-Jean-de-Minervois is the northernmost appellation of the Minervois and the highest in terms of altitude. One of our vineyards borders a canyon. From up there you can see a small church in the middle of a dense forest.
This is the church of Dieuvaille. Inspired by this beautiful landscape, we named this wine after this place: Canyon de l'Eglise.

GRADE VARIETY

TERROIR
Nur 17 hectares of vines (12 in production) are located on a lacustrine limestone plateau, between 280 and 300 meters of altitude, in Saint-Jean-de-Minervois (40 km north of Narbonne).
The soil is very stony and shallow which brings a lot of freshness and minerality to our wines.

WINE MAKING
Here, the vines are over 20 years old. Pruning in cordon de royat and in gobelet. No irrigation. Manual harvesting. Aged in concrete tanks for 12 months.

TASTING
The nose is fruity and delicate. In the mouth, we discover aromas of red fruits and garrigue. Round texture and melted tannins. A well-balanced wine, with a slightly peppery finish.
A red wine on the fruit, juicy that we open easily to please ourselves.

FOOD & WINE PAIRING
Ideal on tapas, with a cheese platter or to accompany a meat dish, white or red (grilled), or stuffed vegetables.

TEMPERATURE OF SERVICE
16 °C, open 30 minutes before serving. See slightly chilled in summer.

3 to 8 years old
